- 500 gms Rice
- as needed Water
- 400 gms Mutton Keema(minced)
- 4 Potatoes pieces cut in two parts
- 1 tbsp Coriander powder
- few Mint leaves
- 100 gms Ghee
- 3 tbsp Ginger garlic paste
- 1 cup Curd
- 1 teaspoon Garam masala powder
- 100 grams Onions, sliced
- For Garam Masala:
- 1 Black cardamom
- 2 Green Cardamoms
- 1 Cinnamon sticks 1pc
- 1 whole Mace
- 3-4 Cloves
- 1 pcs Bay leaf
- 1 tsp Shah jeera
- to taste Meetha ittar
- As per taste Salt
- 2 tbsp Oil
- 1 tsp Black pepper powder
- 1 cup milk
Instructions to make to make Keema Biryani (Kolkata Style)
- Add water in a big pan, add oil, mint leaves, salt to taste, and whole garam masala, let the water boil then add washed rice, let it cook for 80%.
- When rice is cooked, drain the water and keep it a side.
- In another kadai, pour ghee, add onion, saute for 10 min in low flame. When it's brown add minced Keema, stir it.
- Now add, curd, Ginger garlic paste, coriander powder, black pepper powder, salt. And cooked until it's get tender.
- Now stir fry the Keema until it started leaving oil. Keema is ready.
- Boiled the potatoes with food colour and salt and saute it in oil. Keep it aside.
- Preparation for Dum:
- Preparation for Dum: process 1: add some ghee and grease the pan, add a layer of rice, sprinkle some garam masala powder, add mint leaves, then add Keema and spread it everywhere.
- In second layer add again left rice, and repeat the process 1.
- Now to top layer add rice and then spread potatoes, add mint leaves, spread meetha ittar, add 1cup milk. Sprinkle some garam Masala.
- Cover it with aluminium foil paper. And place it on tawa on slow flame. Cook for 15 min.
- Mutton Keema Biryani is ready. Served with salad or raita.
