Ingredients and spices that need to be Take to make Mutton Biryani:

  1. 500 gm basmati rice
  2. 500 gm mutton
  3. 3 onion sliced
  4. 1 tbsp ginger paste
  5. 1 tbsp garlic paste
  6. 1/2 cup curd
  7. 12-15 green cardamom
  8. 2 cinnamon stick
  9. 8-10 cloves
  10. 4-5 bay leaves
  11. 1 star anis
  12. 1 tbsp coriander powder
  13. 1 tbsp red chilli powder
  14. 1 tbsp gram masala powder
  15. 1 tsp turmeric powder
  16. 1 black cardamom
  17. 2 tsp mint leaves
  18. pinch Saffron soak in warm milk
  19. 2 tbsp ghee
  20. as needed Oil
  21. to taste salt

Steps to make to make Mutton Biryani

  1. Soak the rice for 20 minutes. In a bowl take mutton, curd, ginger garlic paste, salt, coriander powder and mix all the ingredients. Marinate it for one hour.
  2. In a pan heat oil. Add sliced onion. Fry till golden in colour. Take it out from the pan.
  3. In the same oil add a few whole spices, I.e green cardamom, cinnamon, cloves and bay leaves. After a few second add marinated mutton. Cook for 5 minutes. Add red chilli powder, turmeric powder and garam masala powder.
  4. Add half portion of fried onion. Cook until oil separates. Add water. Boil it in a pressure cooker for 7-8 minutes or until mutton is fully cooked.
  5. In another pan boil 2litres of water. Add green cardamom, black cardamom, cinnamon, cloves, star anise and bay leaves.
  6. Add one tbsp of oil and 2-3 tsp of salt. Now add rice. Cook it for 4-5 minutes.when the rice is 80 per cent cooked then switch the flame off. Drain the water. Allow it to cool down.
  7. Now take a fresh pan. Put the mutton and gravy in it. Then add rice. Sprinkle the fried onion on the rice.
  8. Drizzle the saffron milk over the rice. Spread some ghee and mint over the rice.
  9. Cover the lid. Put the pan on low flame for 15 minutes. Switch the flame off. Serve the biryani with mint raita.
